Serves 3-4

Here is how to make easy roasted-garlic hummus.  Not only is it easy to make, it’s healthy too! Just whip up canned chickpeas with tahini, roasted garlic and a few other spices for a tasty Mediterranean treat.


  • 1 Can (15OZ) chickpeas
  • 1 Tablespoon tahini
  •  4-5 Cloves roasted garlic (click here for how to roast garlic)
  • Juice of 1/2 lemon
  • Pinch of sea salt to taste
  • Ground pepper to taste
  • 3 Tablespoons extra virgin olive oil
  • 1/4 teaspoon paprika


Open an drain the chickpeas.  Place in a food processor. Add the tahini, roasted garlic, salt, pepper, 2 tablespoons of olive oil and whip until creamy.

Spoon the mixture onto a plate and make a dent in the center so that the hummus looks like a volcano. Pour the remaining olive oil into the center of the dent in the hummus. Sprinkle a dash of paprika on top of the hummus and serve with veggies or pita bread.

postheadericon Roasted Pumpkin Seeds Recipe


Want to use those leftover pumpkin seeds? This is an awesome recipe for toasting pumpkin seeds. These pumpkin seeds are great to snack on and are perfect mixed into a home made snack mix. Use them on salads for a delicious crunchy topping.
You may also use butternut squash seeds, acorn squash seeds, or spaghetti squash seeds for this recipe.


  • 2 cups pumpkin or squash seeds (a little pulp
    left on, unwashed)
  • 2 tablespoons worchestchire sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt (more or lest to taste)
  • pinch of pepper (to taste)


Preheat the oven to 350 degrees.

In a shallow baking pan, add the pumpkin seeds, worchestchire, and vegetable oil and stir.

Add the garlic powder, salt, and pepper and stir until the pumpkin seeds are well coated.

Add a layer of pumpkin seeds to a shallow baking pan, making sure that the pumpkin seeds don’t overlap.

Place the pan in the oven for 25 minutes

Remove from the oven and turn the pumpkin seeds over.

Bake for an additional 20-30 minutes, or until the pumpkin seeds are golden and crispy! Remove from the oven and enjoy.

You can store the pumpkin seeds in a ziplock bag or plastic container for up to 1 week.

postheadericon Homemade Meat Sauce


Makes 8-10 servings

This pasta dish is full of fresh of fresh nutritious vegetables and herbs! Using a carrot in the sauce eliminates the need for sugar, by taking advantage of natures natural sweetener. Adding a bit of white wine vinegar, adds just the right amount of acidity and tang, most tomato sauces lack. Depending on how “meaty”you like your sauce, use between 1 and 2 pounds of fresh, lean ground beef. If you prefer a vegan/vegetarian sauce, skip the meat all together, substitute vegetable stock for the chicken stock, and substitute margarine for butter.  Also try adding fresh mushrooms about 10 minutes before serving, for a tasty variation on this traditional, delicious tomato based pasta sauce!


  • 1-2  pounds –  ground beef
  • 8-10 – large tomatoes
  • 1 –  large sweet yellow onion
  • 1  – head of garlic
  • 1 – green bell pepper
  • 1 – red bell pepper
  • 1 – carrot
  • 1 – small can tomato paste
  • 1/2 cup – olive oil
  • 1/8 cup – white wine vinegar
  • 1/2 cup – white wine
  • 1/2 cup chicken stock
  • 2 tablespoons – butter
  • to taste – white pepper
  • to taste – salt
  • 1/4 cup – fresh oregano
  • 1/4 cup – fresh basil
  • 1/8 cup – fresh roasmary
  • 1/8 cup – fresh thyme
  • fresh grated parmesan cheese
  • fresh mushrooms (optional or a great substitution for ground beef)


1. Cook meat with salt and white pepper and drain the fat. Refrigerate.

2. Blanch tomatoes and set aside.  Instructions for how to blanch tomatoes.

3. Peel and dice onions. Set aside.

4. Seperate cloves of garlic, peel and dice.  Set aside.

5. Chop red and green bell peppers.  Set aside.

6. Finely dice the carrot.  Set aside.

7. Rinse and slice mushrooms (optional)

8. Remove stems and finely dice all herbs.  Set aside.

Cooking Directions

1. Saute garlic and onions in olive oil.  Instructions for how to saute garlic and onion.

2. De-glaze with white wine and chicken stock

3. Reduce to simmer.

4. Add bell peppers and carrot. 

5. Add salt and white pepper.

6. Simmer for 20 minutes, stirring occasionally.

7. Add the blanched tomatoes, ground beef, tomato paste, butter, vinegar and herbs.

8. Simmer for about an hour, stirring occasionally.

9. Add mushrooms 10 minutes prior to serving (Optional)

10. Add freshly grated parmesan cheese and stir until cheese is melted.

11. Serve over your favorite pasta.  Bon Appetit!

Here is an easy recipe for homemade pasta sauce.
Makes about 8 servings.


  • 3  cans diced tomatoes
  • 1 small can tomato paste
  • 3 – tablespoons olive oil
  • 3 – cloves of garlic (diced)
  • 1 – medium sweet yellow onion (chopped)
  • 2 – tablespoons white vinegar
  • 1/2  – tablespoon sugar
  • 1/2  – tablespoon italian seasoning or oregano



Saute the garlic and onion in a medium sauce pan on meduim heat until golden.

Add the diced tomatoes and tomato paste and stir the mixture.

Stir in the italian seasoning, white vinegar and sugar

Let simmer for 20-30 minutes.

Serve over pasta

Sauteed Garlic and Onion Recipe

Sauteeing garlic and onion brings out the a ton of flavor and is better than using raw onions and garlic in most circumstances.  Use sauteed garlic and onions in sauces, soups, stews, chilis, and dips.  Top a burger, steak, or porkchop with sauteed garlic and onions and melted cheese.  Sauteed garlic and onion is also a flavorful addition to vegetables.


  • Olive oil or butter
  • Onions – skin removed and diced, sliced or chopped
  • Garlic – seperate cloved, peel, diced sliced or chopped
  • salt and pepper to taste
  • Beer, wine, stock or viegar


Heat oil on medium to medium high heat

If using butter, melt on meduim heat until clarified or clear

add garlic and sautee until translucent, stirring constantly, taking care not to burn.

Add salt and pepper

Deglaze the pan with one of these: beer, wine,  stock or vinegar which will stop the cooking process.

Reduce heat to simmer

Serve or use in your favorite recipe!
